Lentil & Bacon Soup

A good winter warmer this one, and pretty filling.

Lentils are so cheap to buy, it’s a good one for when you’re skint!

  • Melt the butter and sweat the onion till soft.
  • Turn up the heat, add the bacon and fry till just crisp.
  • Add the garlic, chilli and lentils and stir for another minute or 2.
  • Pour in the chicken stock and simmer for about 30 mins or until the lentils are tender.
  • Season well with salt & pepper and serve.

Ingredients

25g Butter

1 Onion, finely chopped

1 clove Garlic, finely chopped

1 red Chilli, deseeded & finely chopped

75g Green Lentils

3 or 4 rashers bacon

1 Pint chicken stock

Salt & Pepper
