And any herbs such as thyme, rosemary or bay would also make nice additions.
- Preheat the oven to 200c.
- Place the onion, leek and carrot in a large pan with 2 or 3 tablespoons of oil. Cook over a gentle heat until softened.
- Add the mince and cook until brown.
- Add the stock, tomatoes, puree and some seasoning.
Bring to the boil and simmer over a low heat for about 30 mins or until you are left with a thick sauce.
- Mash your spuds and stir in some salt pepper and a large knob of butter if you like.
- Put your mince mixture into a casserole dish, top with the mash and bake in the oven until golden and bubbling.
